calcium periodate is used as an oxidant added to lotions and ointments and also acts as an antiseptic, deodorant and iodine supplement in chicken feed.

It is soluble in water and nitric acid but is not soluble in ethanol. It is an odorless white powder and is used as a dough conditioner for baked goods such as bread, buns and rolls.

Uses: Food Additives and Processing Aids

The addition of calcium salts is a common way to enhance the nutrient content of foods, especially those that are fortified. This is often undertaken in response to legislation or regulations that require certain nutrients to be included, or to restore losses in the production process of certain products.

For example, tofu may be set with a calcium salt such as calcium sulfate, which increases its calcium content by adding calcium ions during boiling and fermentation. This increase is due to a reduction in the complexing compound phytic acid, which makes calcium more available in plant foods.

Various calcium salts may also be used to improve the flavour and texture of certain foods. For example, tofu set with calcium sulfate can have a much firmer consistency than regular tofu.

Iodine supplements in animal feed: A dose-response study demonstrates that the concentration of iodine can be increased by feeding calcium iodate in a mineral mixture to dairy cows in the last lactation third (7-9 months after calving). This results in an increase in milk yield and an increase in iodine levels in the breastmilk, which is necessary for fetal iodine sufficiency during pregnancy.
